Low Carb Lasagna

Ingredients

  • 24 ounces  ricotta cheese or sour cream
  • 1 pound shredded mozzarella cheese
  • 1 jar (32 oz) jar spaghetti sauce
  • 1 egg
  • 1/4 cup parmesan cheese

Instructions

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • slice and roast eggplant
  • combine ricotta cheese, mozzarella cheese, egg sauce in a medium bowl
  • spread some sauce on bottom of pan
  • layer eggplant
  • top with mixture
  • top with sauce
  • repeat
  • top with sauce and parm
