Here is my favorite Weight Watchers White Chicken Chili recipe!
I struggled with my weight ever since I had my son. I tried all sorts of things but nothing quite matched what I was looking for. I started working with a nutritionist and she suggested in addition to following her food suggestions using a calorie counter to meet my goal. I downloaded a few apps and tried them all until I found the one that was the best for me personally. I ended up loving the ww app. It was the perfect way to eat healthily and lose weight in a realistic way.
I stumbled upon this easy white chicken chili recipe on an evening I was craving Mexican and needed something easy and delicious for the whole family. This recipe is perfect, you can make it in a dutch oven if you are home, or if you’re on the go for the day throw everything into the crock pot. The best part of this delicious recipe is it is zero points!
Put all the ingredients into the recipe builder and you’re set!
- 2 lbs boneless skinless chicken breasts (when I am tight for time I use rotisserie chicken)
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper
- 14 oz. great northern beans or navy beans or your favorite white beans drained and rinsed
- 14 oz. cannellini beans or pinto beans drained and rinsed
- 14 oz. canned corn, drained and rinsed
- 16 oz salsa verde
- 4 cups chicken stock or fat-free chicken broth
- if you are not trying to follow a Weight Watchers recipe use can add a 1/2 cup of heavy cream or a splash of milk to make a richer chili
my favorite way is in a slow cooker. Simply add everything and give it a stir. Cook on low for 4-6 hours. Remove the chicken and ensure it is cooked through and either shred or chop. Return to the slow cooker and stir once more.
If using a dutch oven or large soup pot add everything and give it a stir, bring to a simmer, and let cook for 25-30 minutes. Remove the chicken and ensure it is cooked through and either shred or chop. Return to the slow cooker and stir once more.
You can top with tortilla chips, sour cream, green salsa, green chiles, green onions, a dollop of cream cheese, fresh jalapenos and corn tortillas a squezze of lime juice, a drizzle of olive oil, a sprinkle of chili powder for some smokey heat or any of your favorite toppings!
