Want to celebrate Cinco de Mayo Keto? Here is my easy way to celebrate while not slipping from a Keto lifestyle!
This time of year I find myself looking towards summer and realizing that I need to get some weight off that accumulated from a winter of inactivity and comfort foods. I often turn to a keto diet in order to shed those pounds. I find that I can very easily make it healthy and easy to fit into my day, especially if I follow portion control and calorie counting, I use Weight Watchers as a counting tool.
I also want to enjoy the fun seasons and holidays. One of my favorites is Cinco de Mayo and all the Mexican flavors of the May 5th celebration of Mexican culture. I love on any day going to a Mexican restaurant for traditional dishes and I love maybe, even more, a home gathering of friends and delicious recipes and Mexican dishes.
This year I decided to make a taco bar for our keto Cinco de mayo celebrations with my favorite keto Cinco de mayo recipes! The best part is no matter what your dietary preferences there is something for everyone!
I made a batch of my super easy slow cooker ground beef taco meat (which can also make in the instant pot), laid out small bowls with cheddar cheese, my favorite sauteed cauliflower rice, keto tacos made with almond flour tortillas sprayed with olive oil and tossed in the air fryer for a few min to crisp and warm up, sour cream, pork rinds, diced canned green chiles, salsa verde, diced bell peppers, you can fry shredded cheddar cheese and fold to make cheese taco shells, I like to cook up extra protein like shredded chicken breast,
and black beans (which are nonketo of course lol) and any of your favorite toppings!
I also serve a delicious margarita and a keto margaritas as well!
This meal not only makes for a fun get-together on the 5th of may or taco Tuesday for the whole family but the leftovers carry me through the rest of the week! I use the extra ingredients to make a keto Mexican casserole, and the left over chicken to make my cheesey chicken chili, and I use the left over cheese for cheese quesadilla for my sons lunch the next week.
